Yerba Maté

Yerba Maté is a plant in the holly species, which is the source of the mate beverage. Generally consumed in central and southern regions of South America, it is also found in wide use in Lebanon and Syria. Mate is produced in a container (or gourd) filled up to three-quarters full with leaves and topped up with hot water. Sugar may be added at this stage to taste. Flavours are considered to resemble an infusion of herbs, grass, vegetables and a similarity to certain green teas.
